West Cork Distillers are proud to introduce the Cask Finish collection.
A unique collection of SINGLE MALT IRISH WHISKEY, produced in small batches from Irish malted barley and Mullaghmesha mountain water. Each triple distilled whiskey has been aged patiently in first fill bourbon casks and then finished in casks selected from the finest fortified wines and spirits.
The precise distillation and unique finishing delivers a collection of beautifully balanced Irish whiskeys, each differing in their aroma and palate.
RUM CASK

Single Malt Irish Whiskey patiently matured in first fill Bourbon casks & finished in Consorcio Licorero Nacional rum casks. Non chill filtered and no added colour.
TASTE
Roasted flavors like coffee, toast and chocolate coming through, with a dry finish.
AROMA
Notes of honey, vanilla, caramel and chocolate on the nose. Slight fruit, but more a combination of fresh and dried.
SHERRY CASK

Single Malt Irish Whiskey patiently matured in first fill Bourbon casks & finished in Bodegas Baron sherry casks. Non chill filtered and no added colour.
TASTE
Sweet at the beginning but then finishes dry with some spiciness present.
AROMA
Dried prunes, fig, sherry and vanilla notes.
PORT CASK

Single Malt Irish Whiskey patiently matured in first fill Bourbon casks & finished in Quinta Da Boeira port casks. Non chill filtered and no added colour.
TASTE
The port cask finish is the sweetest of the offerings, with the aroma of the dried fruit pulling through.
AROMA
Dried fruit with spice notes of nutmeg and black pepper. Vanilla and toffee also present.
VIRGIN OAK CASK

Single Malt Irish Whiskey patiently matured in first fill Bourbon casks & finished in Kelvin Cooperage virgin oak casks. Non chill filtered and no added colour.
TASTE
Very light with slight fruit, but the main flavour at the end being black pepper.
AROMA
Hay, oak chips, sawdust, vanilla on the nose.
CALVADOS CASK

Single Malt Irish Whiskey patiently matured in first fill Bourbon casks & finished in Calvados Garnier casks. Non chill filtered and no added colour.
TASTE
Dried fruit associated flavours with vanilla and almonds also coming through.
AROMA
Fresh fruit dominated by apples and white pear, with a hint of almond.
